2. In a bowl, combine egg, remaining ¾ cup of sugar, oil, milk, flour, baking powder and salt. Stir and pour
or spoon over the rhubarb. The batter does spread as it bakes.
3. Bake at 350° for about 30 minutes.
4. Serve warm with ice cream.
