An Invitation.

When I went to bed, I saw this laying on the counter, where my hubby eats his breakfast, early, every morning while the rest of us are still asleep in our warm, cozy beds.



When I got up in the morning, this is the reply I saw
(and you'll notice in the above picture the word "YES" has been circled):



There was one little girl in my house that morning who had a BIG smile across her face.


As if he would have said "No"  (but that's my little secret).

I invited my mom out for her birthday.

We ate at the Melting Pot. 

 We were greeted with a champagne toast from the manager.


The service was wonderful.

The food even better.



My heart ♥ ~ happy.

My stomach  ~ a little too full.  
Umm, yeah, no need for a photo ☺!


We had a great night!

Have you seen it?

I took my kids to see this last week while they were on Spring Break.



I laughed.

They laughed.


I laughed some more.

Sure there were some words in it we don't use in our house... like "Moron". 

BUT......
We all loved it.


Sassy has read the books and said there were a few things missing, but it was still soooo good.

The Most Delicious Banana Bread Ever


That is if you
ask me.


Banana Bread with Pecans
from the Food Networks Tyler Florence


2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup chopped pecans

Directions:

Preheat oven to 350 degrees and lightly grease a 9x5" loaf pan

In a large bowl, combine the flour, baking soda and salt; set aside.

In a small bowl, gently mash 2 of the bananas with a fork, leaving them with a bit of texture.

Using an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes.  You want a light and fluffy banana cream. 

Add the melted butter, eggs and vanilla; beat well and scrape down the sides of the bowl. 

Mix in the dry ingredients just until incorporated. 

Fold in the nuts and mashed bananas. 

Pour into the prepared loaf pan.


Bake about 1 hour and 15 mins until golden brown and a toothpick inserted in the center of the loaf comes out clean.  Rotate the pan periodically to ensure even browning.


I usually have to cook this longer than 1 hour and 15 mins.  And, I find banana bread typically gets pretty dark on top.  Therefore, I will sometimes put a piece of aluminum foil over the top about 1/2 - 3/4 of the way through the cooking time.


And what you end up with is YUMMY, Pecan NUTTY, DISAPPEARING
Banana Bread!
