O{pin}ions

Wow, I've been pretty much non existent on my blog for a good week.  Hope you all had a great long labor day weekend!  Sassy and Action started school yesterday.  Hard to believe we have a 6th grader and 3rd grader in our house!


Anyway, this is maybe cheating, but for their back to school breakfast, I made one of my own recipes that I have pinned.  Obviously the o{pin}ion on this one, is YUMMY!  Make it and make it again :)  We do!

Easy Rolls ~ but we call them "Sticky Buns"

Grilled Pesto and Tomato Pizza

Another really great recipe!  The kid love this ~ I do however make one without tomatoes 
as Action and Smiley are not fond of them.


Chicken Lo Mein

So, this for us, was just ok.  It gets pretty good reviews on the site, but we all found it kind of 
bland. Nope, won't make this again :(


And Lastly, 

Slow Cooker Chicken Caesar Sandwiches

Again, this sounded really good, but I didn't think it was that great.  I thought the meat was dry and not super flavorful.  We did add some red onion to our sandwiches.  However, I won't be making this again as I much prefer my simple Chicken Caesar Wraps as does the rest of my family.


Anyway, that's it for now ~ off to enjoy my littlest before she starts preschool tomorrow!  Boo ~ they grow too too fast!

Spaghetti Pizza

I got this recipe from my brother in law a few years ago.  It's really easy (but needs about 1 hour for cooking time) and is yummy.  Even my kids like it, and they are my toughest critics :)

Spaghetti Pizza

Ingredients:


8oz cooked spaghetti noodles
2 eggs
1 bag shredded mozzarella cheese
1 tsp garlic powder
1 jar of spaghetti sauce
1 bag of shredded cheddar or pizza cheese
Any pizza toppings you want (this time I used: browned ground beef, green pepper, onion, mushrooms and black olives)


Directions:


Preheat oven to 375 degrees.

In a large bowl, mix together the cooked noodles, eggs, bag of mozzarella cheese and garlic powder.


Gently press into a 9x13 baking dish coated with nonstick spray.


Bake for 25 mins.

When it is done baking,  pour the entire jar of spaghetti sauce over the baked noodle mixture and spread it out evenly.


Add any pizza toppings you desire.

Spread the cheddar cheese evenly over your toppings.

Bake at 375 for an additional 30 minutes.

Grilled Pesto Pizza

This is one of my favorite summer meals.  It only takes a few ingredients, is easy to make and tastes so fresh, it screams summer.

Here's what you need:


1lb of frozen  bread dough ~ however, I make pizza dough using my bread maker (45 minutes in the machine and wham bam fresh dough)


Jar of traditional Basil Pesto (I suppose you could make your own........)
Tomatoes, sliced  ~ as many as you'd like (I use Roma)
Mozzarella cheese ~ as much or as little as you want


Here's what you do:

  • Get your grill all warmed up ~ you'll want to grill these pizzas on low
  • Roll out your dough ~ no thicker than 1/4" thick
  • Brush each side with olive oil

Then....

  • Carefully place your dough on the grill
  • Grill until the first side (you know, the side facing the heat) is golden ~ don't over cook
  • Then flip those babies over.
  • Add your toppings ~ for the pesto pizza, I spread the crust with the pesto, add a few tomatoes,  a couple handfuls of cheese then some more sliced tomato.  I was also nice and made a boring old pepperoni pizza for the two littles (Yes, Action and Smiley I AM talking about you!)

  • Cook until the 2nd side is golden and the cheese is melted.


Mmmm...... yummy grilled pesto pizza.  Throw in a little salad, a glass of wine, family and the outdoors.  A perfect summer night if you ask me!
